Vanilla and strawberry pie

4 servings

pie pastry:
1 cup flour
1 tablespoon sugar
1 teaspoon vanilla sugar
50 g butter
a pinch of sea salt
1/2 teaspoon water

strawberry mix:
1 cup strawberries
1 tablespoon sugar
1 teaspoon cornflour

cream fraiche

Preheat the oven to 225 degrees.
Mix all ingredients for the pie crust in a food processor.
Slice the strawberries and mix with sugar and cornstarch.
Grease a mold with butter. Pour the strawberry mixture and crumble over the pastry. Drizzle a little honey and bake the pie for 15-20 minutes. Serve with cream fraiche and strawberries.



Salad with pickled red onions





Salad with pickled red onions:

pickled red onions
goat cheese

Pickled red onions:
One jar
2 red onions
1 dl vinegar
2 dl sugar
3 dl water
A pinch of sea salt

Begin to make the pickled red onions. Mix vinegar, water, sugar and salt in a saucepan, stirring until the sugar has melted. Slice the red onions into thin pieces and place in the pan. Let the pickled onions cool for about an hour.

Mix the pickled onions with salad, goat cheese and blueberries. Serve with a slice of bread.


Green lunch


Linguine with kale, spinach and feta cheese:

50g Kale
30 g Spinach
A piece of feta cheese

Cook linguine as directed on the package. Roast kale and spinach with garlic oil in a pan. Mix the linguine with the green mixture, top with feta cheese, mint, salt, pepper and squeeze of lime juice.



Chocolate cake with flowers



I hope you guys have a lovely Sunday. I needed something good for the coffee, so today I made this chocolate cake.

Chocolate cake with whipping cream: 

100 g butter
1 1/2 cups sugar
1 teaspoon vanilla powder
2 eggs
1 cups flour
1/2 cup cocoa
30 g dark chocolate
sea salt

2 cups whipping cream

Heat the oven to 200 degrees.
Melt the butter and add the chocolate. Whisk together sugar, vanilla powder and eggs.
Mix together flour, cocoa and sea salt, stir into the egg mixture, then add the butter and chocolate mixture.
Pour into a bakning pan. Bake in middle of oven for about 15 minutes. Whip the cream and and serve with the chocolate cake.




Lemon pie with meringue



This weekend my boyfriend did this lovely lemon pie. This is his recipe:

Lemon pie with meringue

pie shell:
150g butter
1/2 cup powdered sugar
2 cups wheat flour
2 teaspoons baking powder
sea salt

Lemon cream:
2 organic lemons (both zest and juice)
3 egg yolks
125g butter
1 1/2 cups sugar
1 teaspoon vanilla sugar

3 egg whites
1 1/2 cups sugar

Pie crust: Melt the butter, add the remaining ingredients. Press the dough into a pie dish and place in the fridge for about 30 minutes. Preheat the oven to 225 degrees, bake the pie shell in about 10 minutes. , reduce the
Lemon Cream: Wash the lemons, grate the zest and squeeze out the juice. Mix the lemon zest, lemon juice and egg yolks. Melt the butter, then add sugar and the lemon mixture, boil until the cream has thickened. Let the cream cool, then pour the lemon cream into the pie shell.
Meringue: Beat egg whites and sugar hard. Spread the meringue over the lemon cream and bake in the oven for a few minutes.
