Blueberry truffles with sea salt

Blåbärstryffel med citron och havssalt

ca 15 stycken

220 gram vit choklad (20 gram är till dekoration)
1 dl vispgrädde
0,5 msk honung
2 tsk blåbärspulver
0,5 tsk riven citron
florsocker
havssalt

1. Hacka chokladen och lägg den i en skål.
2. Koka upp grädde och honung i en kastrull. Häll över chokladen och tillsätt blåbärspulver och riven citron. Låt stelna i kylskåpet.
3. Ta ut blandingen och rulla 15 stycken bollar, rulla dem sedan i florsocker.
4. Smält chokladen (20 gram) i mikrovågsugnen eller över vattenbad. Ringla chokladen över tryfflarna, strö på lite havssalt och dekorera med ätbara blommor.

TIPS! Lägg några blåbärstryfflar i en ask med silkespapper, dekorera med ett fint band och du har den perfekta gå-bort presenten. Trevlig helg!

220 grams of white chocolate (20 grams are for decoration)
1 dl heavy cream
0.5 tablespoons honey
2 teaspoons blueberry powder
0.5 teaspoon grated lemon
icing sugar
sea salt

1. Chop the chocolate and place in a bowl.
2. Boil the cream and honey in a pot. Pour over the chocolate and add the blueberry powder and grated lemon. Leave to set in the fridge.
3. Remove the mixture, and roll about 15 balls, roll them in icing sugar.
4. Melt the chocolate (20 grams) in the microwave or over a water bath. Drizzle chocolate over the truffles, sprinkle on a little sea salt and decorate with eatable flowers.

TIP! Add some blueberry truffles in a box with tissue-paper, decorate with a beautiful ribbon and you have the perfect giveaway. Have a lovely weekend!

Pear pie with walnuts and vanilla

In English:

4 pear
0.5 teaspoon cinnamon
0.5 teaspoon cardamom
1 teaspoon vanilla sugar
1 teaspoon potato flour
1 tablespoon sugar
20g chopped walnuts

butter for greasing the baking pan

pie dough:
100g butter
0.5 dl syrup
1 dl wheat flour
2 dl oatmeal
A pinch of sea salt

1. Preheat the oven to 175 degrees. First, grease the baking pan (15 cm in diameter) with butter. Peel and slice the pears, mix it together with the cinnamon, cardamom, vanilla sugar, potato flour, sugar and walnuts in a bowl, pour over it in the baking pan.
2. Boil butter and syrup in a saucepan, add the wheat flour, oatmeal and sea salt. Spread the dough over the pears. Bake in the oven for 25-30 minutes. Serve with sour cream, vanilla sauce or ice cream.

In Swedish: 

4 st päron
0.5 tsk kanel
0.5 tsk kardemumma
1 tsk vaniljsocker
1 tsk potatismjöl
1 msk socker
20 g hackade valnötter

smör till bakformen

Pajdeg:
100 g smör
0.5 dl sirap
1 dl vetemjöl
2 dl havregryn
En nypa havssalt

1. Sätt ugnen på 175 grader. Börja med att smörja bakformen (15 cm i diameter) med smör. Skala och skiva päronen, blanda tillsammans med kanel, kardemumma, vaniljsocker, potatismjöl, socker och valnötterna i en bunke, häll över det i bakformen.
2. Koka ihop smör och sirap i en kastrull, tillsätt vetemjöl och havregryn. Fördela smeten över päronen i formen. Grädda mitt i ugnen 25-30 minuter. Servera med creme fraiche, vaniljsås eller glass.

Cold avocado soup with pumpkin seeds and basil

A large serving or two smaller servings.

soup:
1.5 cups cold vegetable stock
1 avocado
1/4 cucumber
2 tablespoons sour cream
salt and pepper

topping:
1/2 cup pumpkin seeds
basil
1/2 teaspoon olive oil
feta cheese

Mix all the ingredients for the soup, pour it into a bowl. Chop the basil and pumpkin seeds, mix with olive oil, sprinkle the mixture on the soup and top with feta cheese.

Paprika with creamy bulgur and nectarine

Paprika with creamy bulgur and nectarine

2 servings:

2 paprika
bulgur
0.5 dl cream fraiche
1 teaspoon mayonnaise
7 sugar peas
feta cheese
leek
basil
salt & pepper
Ev. nectarine, halloumi and rocket salad

Preheat oven to 200 degrees. Cook the bulgur according to the instructions on the package. Chop the leeks and sugar peas. Mix the bulgur with leeks, sugar peas, mayonnaise, cream fraiche, basil, salt and pepper. Divide the paprika and fill with the mixture, and top with feta cheese. Bake in oven for about 12 minutes. Serve with sliced nectarine, halloumi and rocket salad.

 

 

Vanilla and strawberry pie

Vanilla and strawberry pie

4 servings

pie pastry:
1 cup flour
1 tablespoon sugar
1 teaspoon vanilla sugar
50 g butter
a pinch of sea salt
1/2 teaspoon water

strawberry mix:
1 cup strawberries
1 tablespoon sugar
1 teaspoon cornflour

honey
cream fraiche

Preheat the oven to 225 degrees.
Mix all ingredients for the pie crust in a food processor.
Slice the strawberries and mix with sugar and cornstarch.
Grease a mold with butter. Pour the strawberry mixture and crumble over the pastry. Drizzle a little honey and bake the pie for 15-20 minutes. Serve with cream fraiche and strawberries.
