To load up with a delightful breakfast gives energy and joy throughout the day.

Spinach cream with eggs and walnuts:

2 tablespoons cream fraiche
1/2 cup baby spinach
1/2 avocado
salt and pepper
a slice of bread
egg
walnuts
cress

Mix cream fraiche, spinach and avocado, then add the cream on the bread. Pour a little salt and pepper. Serve with eggs, walnuts and cress.

Vegetarian lunch

Simple food is my philosophy, and that is what this vegetarian lunch is.

Fried eggs with mushrooms and parsley:

2 eggs
10 mushrooms
1/2 yellow onion
100g spinach leaves
3 tablespoons cream
1 tablespoon oil
salt and pepper
fresh parsley
parmesan cheese

Start by frying eggs. Then fry the mushrooms, onions and baby spinach in oil. Add the cream, salt, pepper and fresh parsley. Grate a bit of parmesan cheese before serving.

Chocolate dessert with a taste of raspberry

Last Friday, I had cravings for chocolate and that resulted in this chocolate dessert. The crispy pie shell fits perfectly with a smooth chocolate and raspberry cream.

Pie with chocolate and raspberry cream

pie shell:

75 g butter
1 cup flour
2 teaspoons cocoa
1/2 teaspoon salt
2 tablespoons milk

Heat the oven to 200 degrees. Mix all ingredients except milk in a food processor, then add a tablespoon of milk at a time. Press the dough into four small pie dishes or one large. Bake in the center of the oven for about 10 minutes.

chocolate and raspberry cream: 

1 1/2 cups raspberries
1/2 cup sugar
1 teaspoon vanilla
200 g dark chocolate
1 1/2 cups whipping cream

Boil raspberries and sugar on medium heat for about 2 minutes. Then strain the sauce into a bowl. Melt the chocolate over a water bath or in the microwave. Pour the melted chocolate into the bowl with the raspberry sauce. Whip the cream with vanilla sugar, then mix with the other ingredients. Pour the chocolate and raspberry cream into pie shells and place in the fridge.

Cheesecake with caramel sauce

Cheesecake is one of my favorite desserts, and especially after my mother’s recipe. Some friends were visiting me last weekend and then I made this cheesecake.

Cheesecake with caramel sauce

cheesecake:

3 eggs
1 1/2 cups whipping cream
1 1/2 cups sugar
200g cream cheese
2 teaspoon vanilla sugar
1 pinch of salt

Whip the cream in a bowl.
Whip the sugar, vanilla sugar and egg yolks in another bowl. Then mix the whipped cream, salt and cream cheese in the bowl.
Beat egg whites in a separate bowl and then mix with the remaining ingredients.
Place the cheesecake in the freezer for at least 5 hours, or preferably overnight.

caramel sauce: 

40 g butter
1 1/2 cups sugar
1 cup whipping cream
2 teaspoon vanilla sugar
sea salt

Whip together butter, sugar, whipping cream and sea salt in a pot.
Bring to boil and reduce heat. Cook for about 6 minutes. Stir constantly.
Beat in the vanilla sugar and cook for another 1 minute.
Pour into a jar and place in the fridge.

Blueberry smoothie flavored with vanilla

Peonies are my favorite flower, and right now, I enjoy them as much as I can. And to celebrate that summer is here I have made a simple and tasty blueberry smoothie flavored with vanilla that is as good for breakfast as a snack. I love the smoothie’s, it’s so easy to do and the fun is that there are an infinite number of combinations, which makes it suitable for all. Dare to mix your favorite flavors together and let your imagination run wild.

/Pioner är min favoritblomma och just nu njuter jag av dem så mycket jag kan. Och för att fira att sommaren är här har jag gjort en enkel och god blåbärssmoothie med smak av vanilj som är lika god till frukost som till mellanmål. Jag älskar smoothies, det är så enkelt att göra och det roliga är att det finns oändligt många kombinationer, som gör att det passar alla. Våga mixa dina favoritsmaker tillsammans och låt fantasin flöda.

Blueberry smoothie flavored with vanilla

One servering. 

1 1/2 cups of yogurt
1 tbsp milk
1/2 vanilla sugar
1 cup of blueberries
Ev. 1 tsp agave syrup

Scrape out the vanilla pod and add all ingredients in a blender. Mix until the smoothie is smooth and creamy. And then it’s ready to serve.

/Blåbärssmoothie med smak av vanilj

En portion. 

3 dl yoghurt
1 msk mjölk
1/2 vaniljstång
1 dl blåbär
Ev. 1 tsk agavesirap

Skrapa ur vaniljstången och lägg alla ingredienser i en mixer. Blanda tills smoothien är len och krämig. Häll upp och servera i ett glas.
